Thanks to Momocho chef Eric Williams for making the best guacamole in Cleveland and for putting a delicious modern spin on Mexican food… and for giving us foodies the opportunity to get to know this talented chef a bit better.

  1. the top 5 spices that are a must in every kitchen: kosher salt / whole peppercorns + a mill / cumin seeds / a good chile powder / bay leaves
  2. favorite and least favorite food to make: love to make duck confit / hate making complicated special orders
  3. if you could cook for one person, real or dead, who would it be: my wife heather / we’ve been together for 19 years + i’ve only cooked for her about 6 times / but i like when she tastes my food at momocho because she’s so honest about the flavors / she really knows good food!
  4. you’re having a dinner party. top 5 songs on your play list: any five songs from momocho’s playlist / we burn all our own music so we like it all
  5. favorite restaurant in cleveland: red the steakhouse
  6. what restaurant do you miss: KeKA / i got my first taste of running a kitchen + met a lot of todays great chefs
  7. favorite thing about cleveland and what drives you nuts: being part of this culinary growth in cleveland / i don’t think local chef’s get enough credit for what they do on a daily basis / customers who come into momocho and before they even order tell us they hate mexican food
  8. most famous person you have cooked for: i cooked a private dinner for the fugees when they came into town for a concert a couple years back / also the local celebs – patricia heaton, mike fratello, and Z (cavs player)
  9. most unusual food you have ever tried: pickled butterfly larva / found them at an indonesean grocery in indianapolis while traveling to a food show / juicy little buggers!
  10. if you weren’t a chef, what would you be doing: drawing + painting / playing with my son jaxson

I'm hoping the answer to sharing the guac recipe will be yes. I'll be checking back frequently to see if it's been posted. I make some of the best guac around, I'm told so I like to compare and contrast...

No way, I make the best guac in Cleveland. NO JOKE. I never heard of RED ... I am no celeb chef, but I have to say, of all the Cleveland restaurants I miss the most, it would be "MISE". Best restaurant experience I have ever had. I think it was on Clifton in Lakewood. I wonder if the owner started a new place. Do you know, by any chance?
